In 1978, the farmer owner of the Lacapelle Cabanac village château restored a run-dawn building ta install vinification cellars. During the work he uncovered a surprising edifice: A stone vault building with drainage holes in the upper section, the remains .of a cellar dating back to the 18th century. At the top, the grapes were trod by foot and the juice would flow from the notches into barrels placed on the ground. Over 200 years later, Château de Lacapelle Cabanac had just returned to its winemaking vocation ... and to Cahors, one of its great terroirs of origin.<br>In 2001, Thierry Simon and Philippe Vérax, two Parisians who wanted to leave the city life, purchased the thirty-year- old estate which had already made same fine cuvees. Their ambition was "simple": To make the wine of their dreams while preserving the environment. They undertook work for renovation and compliance of the cellar. New smaller vats were purchased to allow plot-by-plot vinification. At the end of 2001, our two new winemakers started work to make the transition to organic farming on the 25 hectares of this fine property on the limestone plateau. Sails were tilled and mechanical weed control was implemented. The only treatments used to fight plant diseases were sulphur and copper-based. Their investment showed results quickly, for the entire line of products. Their wines showed more constant quality and smoothness. After having created a product line ranging from smooth, fruit y wines ta very concentrated Cahors matured in new oak barrels (Malbec XL), they went back to traditional maturing. Their cuvee aged on the lees in concrete vats using optimally ripe grapes, represents what they consider to be the finest expression of their terroir. Today, all the wines of Château Lacapelle Cabanac are fine products, which also offer an excellent price- pleasure ratio.
